A Hilo native, Chef Kaikili Roldan has worked in a variety of fine-dining restaurants, including apprenticeship under sushi master Norio Yamamoto. Recognizing a need for fast and affordable sushi on the Big Island, he decided to use his knowledge and technique to open a unique fast-casual concept where customers can build their own sushi rolls and bowls. Sushi HI's first location opened in Pahoa in June 2020, with a second location slated to open in Waikoloa in 2022.
